Broccoli Salad

 I am on the search for different types of salads this summer because we usually land up having the same old green and potato salad every time. So, I am going to try some new and hopefully tasty salad recipes that I will share with you.

I know broccoli for many is not on the top of the list of favourite vegetables, especially for kids. But there are ways you can make this green veggie more palatable besides eating it alone and raw. A broccoli salad is an easiest and best way to serve raw broccoli. Although, some may prefer it slightly blanched. Simply add it with other healthy food choices like sunflower seeds, dried cranberries, or peppers. You can also add things like bacon bits or couscous, anything you think will go in the salad. Add a creamy dressing and you are set to go.

You can easily make this recipe ahead of time, so you do not have to rush around last minute to get things done.



Broccoli Salad, you will need

·         Two chopped-up broccoli heads (depending on the number of people you are making for)

·         2 spring onions (you can also use red onions)

·         ½ Cup of raisins or cranberries

·         ¼ cup sunflower seeds or pumpkin seeds

·         ½ Cup Bacon cut into pieces

·         1 red or yellow pepper

·         Nuts: almonds or pecans chopped into smaller pieces (optional)

Wash and cut the broccoli up into smaller pieces and cut up the pepper. Place all your ingredients into a serving bowl.

Note: After you have washed the broccoli, make sure it is dry before you add any other ingredients. The salad can get a bit soggy if there is too much moisture left over.

Creamy Dressing

·         1 cup Mayonnaise

·         3 T Cider vinegar

·         1 T Brown Sugar

·         Salt and Pepper

Whisk all ingredients in a bowl and pour over your broccoli mix. If you want to skip this step and simply buy a dressing from the shop, that’s okay too.

You can either refrigerate for an hour and then serve immediately or prepare the day before. Just allow the dressing to soak into the salad for a while. In most cases, serving the day after always seems to taste better.

Eat the salad by itself or best served with a variety of other dishes like grilled honey mustard chicken.
